It's no secret that our Soph loves a good cuppa, and we all know no cup of tea is complete without a biscuit for dunking.
So here's the recipe for her allspice cookies – they’re the perfect winter warmer!
Sophie’s Allspice cookies
Ingredients
Biscuits:
- 175g plain flour
- 110g butter or margarine at room temperature
- 50g caster sugar
- 1 tsp allspice
- 2 tsp cinnamon
Decoration:
- Extra caster sugar to dust
- Royal icing
- Silver balls
Method
- Preheat the oven to 150C and lightly grease a baking sheet.
- Using a wooden spoon, beat the butter until it’s a soft consistency. Then beat in the sugar, followed by the sifted flour, allspice and cinnamon.
- Bring the mixture together using the wooden spoon, then finish off with your hands to form a paste.
- Transfer to a board lightly dusted with caster sugar and roll out to 3mm thick.
- Cut the biscuits using a circular cutter and arrange on the baking sheet.
- Place on the highest shelf in the oven for 30 minutes.
- Cool the biscuits on a wire rack, pipe on the royal icing in snowflake shapes and add some silver balls to finish.
Top tip: Add some orange zest to fruit ‘em up a bit!
